Zucchini Cannellini
3 zucchini
1 can canellini (white kidney beans)
A few lemons and/or limes
2 tbsp. olive oil
Pepper
Super easy. Shred the zucchini with a cheese greater, rinse the cannellini and dump them on top, and zest the lemons and/or limes and dump the zest on top. Then pour the olive oil on, grind some pepper over it, and cut and squeeze the lemons or limes on to taste. Toss and enjoy!
Lemon Basil Water
Yeah, okay, just take some lemons, squeeze them into a pitcher of water and/or slice them and put them in the water, whatever. Throw some basil leaves in, and smash it all together. Not quite as amazing as basil lemonade, but hey. Healthier and still really, really good!
